Electric current flowing through spiral tubes built into the surface, filled with halogen vapour, causes infrared radiation that heats the cookware with the food. The temperature of the stove rises almost instantaneously and cools down just as quickly when the current is interrupted.

The principle of operation of induction stoves is based on the heating of cookware by eddy currents induced by a magnetic field. This does not change the stove burner’s temperature but heats the dish’s metal body.

Main disadvantages:

  • Microcracks appear even from falling splashes;
  • After cleaning, indelible stains remain;
  • The cost is higher than even other types of electric stoves.

Induction cookers

Main advantages:

  • Fast heating of the burner (comparable to gas stoves);
  • High efficiency (up to 90%);
  • Turns on only when placed on the surface of the dishes. If you accept the dishes – the burner turns off automatically;
  • The set temperature is precisely maintained;
  • The heating temperature does not depend on the voltage in the mains;
  • A large number of additional features;
  • Casy cleaning.

Main disadvantages:

  • Only certain types of dishes are suitable;
  • If several burners are working at the same time, the power of each burner is reduced;
  • Increased load on the wiring;
  • Electromagnetic radiation affects nearby devices and equipment.

Natural or LPG models

Main advantages:

  • Lower cost;
  • Quick start and faster cooking;
  • Any utensil is suitable;
  • Easily adjust the temperature of the hob.

Main disadvantages:

  • High explosiveness;
  • Burns oxygen in the room (when using, there must be an open window);
  • It is impossible to accurately set the temperature in the oven;
  • the smell of burning and sooty dishes and closely spaced items in the kitchen.
