How Cheap Can I Eat – JanuWorry Edition


January is always tough on the wallet. Aptly called Januworry after the many weeks we need to make ends meet. This month’s recipes are cheap and easy to make. Optional ingredients are there only if money permits it. Take photos of your meals and share them with us on Instagram @debtrescuesa. 

Poor Man’s Pie

Ingredients:

  • 7 Large potatoes
  • 1 Can sweetcorn
  • 500g Boerewors / mince
  • Salt & pepper to taste
  • Optional: cheddar cheese

Method:

  1. Preheat the oven to 180°C
  2. Cook your mince or boerewors until thoroughly cooked. 
  3. Season with salt, black pepper. 
  4. Cut the boerewors into small chunks. Spread across a medium sized oven dish, add tin of sweetcorn. Spread mashed potatoes evenly over the mixture. Sprinkle optional cheddar cheese over the top.
  5. Bake in the preheated oven until heated through, about 20 minutes. 

Egg & Potato Casserole 

Ingredients:

  • 6 Large eggs
  • 1 Onion, diced
  • 3 Large potatoes, pre-boiled
  • Salt & pepper to taste
  • Optional: spring onions, bacon

Method:

  1. Pre-heat the oven to 180°C
  2. In a pan fry the onion and optional ingredients
  3. Add the boiled potatoes, cut into smaller pieces along with the 6 large eggs and fried ingredients into an oven proof bowl. 
  4. Set to bake for 20min or until ready. 

Spaghetti & Tomato Sauce

Ingredients:

  • 1 Packet spaghetti
  • 100ml Tomato sauce
  • Salt & pepper to taste
  • Optional: sprinkle cheese

Method:

  1. Boil spaghetti with salt and pepper
  2. Strain and place back into pot.
  3. Add tomato sauce, salt and black pepper to taste.
  4. Optional sprinkle cheese over once served.
