How Cheap Can I Eat? December 2022 Edition


The three chosen recipes for the month of December are yummy, under R100 and will feed five people each. We even added our favourite ‘Festive Rocky Road’ recipe. Make sure to take photos, tag us and let us know if you have any recipes to share.

Festive Recipe #1 – Roast Veggies with Garlic

Ingredients:

6 Large peeled potatoes
3 Large peeled carrots
1 Butternut, cubed
4 Cloves garlic, minced
1 Tbspn olive / sunflower oil
1 Generous pinch of thyme
2 Sprigs Rosemary finely chopped

Directions:

Preheat your oven to 180°C.
Cut all veggies into cubes (bite size) and place on
ovenproof dish.
Mix together garlic, oil, thyme and rosemary.
Sprinkle this mixture across the veggies.
Bake in the oven for approximately 20minutes or until the veggies are soft. (Carrots are always the best indicator if your veggies are ready)

Festive Recipe #2 – Festive Roast Chicken

Ingredients:

2 Tbsp olive/sunflower oil
2 Tbspn softened butter
1 Lemon
4 Cloves garlic, minced
2 Sprigs Rosemary
1 Whole chicken
Salt & pepper to taste

Directions:

Grate the skin of the lemon. In a small bowl mix the lemon rind, butter, oil, garlic, salt and pepper.
Mix the mixture until it begins to thicken slightly.
Rub mixture on chicken and place the chicken in the refrigerator for 15 minutes.
Preheat oven to 180°C.
Place chicken in ovenproof dish, place rosemary sprigs on top of the chicken.
Place in the oven for 1 1/2 hours or until the chicken is golden brown.

Festive Recipe #3 – Festive Rocky Road

Ingredients:

200g Milk chocolate
100g Dark chocolate
80g Marshmallows
150g glazed cherries (optional)
25g desiccated coconut

Directions:

Melt your chocolate together in a bowl over boiling water.
In a separate bowl mix together your cherries, coconut and marshmallows.
Prepare your loaf tin or bowl with wax paper (make sure it can fit into your refrigerator).
Mix all ingredients together and pour into your loaf tin and refrigerate for 1 hour.
Slice, serve and enjoy!
