Sardine Pasta with Rosemary and Parsley

This recipe will feed a family of 5 and cost approximately R93.48

Ingredients:

1 tbsp sunflower oil

3 garlic cloves, finely chopped

1 rosemary sprig, leaves finely chopped

2 x 120g cans sardines

500g spaghetti

1 tin tomato Puree

4 finely chopped sprigs of parsley

Optional: grated cheese

Directions:

  1. Heat your sunflower oil in a frying pan on low to medium heat. Fry the finely chopped garlic cloves. Add the rosemary and the sardines. Cook for around 2 – 3 minutes and then add your tomato puree. Stir and fry for a further 5 minutes. Set aside to cool. 
  1. Put a big pot of water on the stove. Add a pinch of salt and let it boil. Once boiling, add your pasta and boil until cooked to taste. 
  1. Drain the pasta and add your sardine and garlic mixture. 
  1. Serve and enjoy. 

Chickpea Curry with Cumin Rice

This recipe will feed a family of 5 and cost approximately R95.53

Ingredients:

1 tbsp vegetable oil

1 finely chopped onion

4 tsp cumin seeds

1 tsp finely chopped garlic

1 tspn crushed ginger

2 tsp curry powder

2 x 400g tins chickpeas

100g tomato puree

30g finely crushed coriander

300g basmati rice

Directions:

  1. Heat your oil in a frying pan. Add your finely chopped onion and allow to brown. Add half your cumin seeds, garlic, ginger and curry powder. Stir continuously to make sure the spices do not burn.
  2. Add the chickpeas and tomato puree. Stir.
  3. Add your finely crushed coriander. Add water if the mixture gets too thick. 
  4. Boil water with cumin seeds and add 300g of rice. Once ready add salt to taste.
  5. Serve and enjoy. 

Fish Curry with Rice

This recipe will feed a family of 5 and cost approximately R98.63

Ingredients:

250g fish of choice

1 tspn lemon juice

1 tsp turmeric powder

3 tbsp vegetable oil

1 finely chopped onion

1 tbsp finely chopped ginger

3 tbsp chopped garlic

2 tsp cumin seeds

1 tin coconut milk

2 tsp coriander powder

2 tbsp tomato purée

300g sweet potato/butternut/potato

finely chopped coriander

300g basmati rice

Directions:

  1. In a large bowl, place your fish, half turmeric powder, plenty of black pepper and half your lime juice. Stir and set aside. 
  2. In a frying pan add your oil, onions, salt, and remaining spices (garlic, ginger, turmeric).
  3. In a large pot boil your potato/ sweet potato / butternut. Strain once soft. Add to the frying pan spices and stir. 
  4. Add your coconut milk, water if needed and simmer on medium heat for approximately 15 min or until thick.
  5. In a large pot, cook your rice. 
  6. Dish, sprinkle with coriander and enjoy.
